  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes
  • 2 cups beef broth
  • Corn tortillas
  • Oil for frying
  • Cilantro and diced onion for garnish

Instructions

  1. Soak the dried chilies in hot water for about 15 minutes until softened. Blend with onion, garlic, and diced tomatoes until smooth.
  2. Place beef in the slow cooker and pour the blended mixture over it. Add beef broth and seasonings.
