Ingredients
- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup parmesan cheese, grated
- 1 cup spinach, chopped (optional)
Instructions
- Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat until hot.
- Add the chicken to the skillet and cook for 5-6 minutes on each side until golden brown. Remove from skillet.
- Lower the heat and sauté minced garlic for about 30 seconds until fragrant. Pour in the cream, stirring continuously.
- Mix in Italian seasoning and parmesan cheese until smooth. If using spinach, add it now and let simmer for 2-3 minutes.
- Return the chicken to the skillet, spooning sauce over each piece. Allow to simmer for an additional minute before serving.
