  • 1 pound chicken tenderloins
  • ½ cup flour
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water (or milk)
  • â…” cup shredded sweetened coconut flakes
  • â…” cup panko bread crumbs
  • Oil for frying

Instructions

  1. Set up four shallow bowls: mix flour, chili powder, salt, and pepper in one; whisk eggs and water (or milk) in another; place coconut flakes in the third; and fill the fourth with panko bread crumbs.
  2. Coat each chicken tender by dredging it in flour, dipping it in egg wash, covering it with coconut flakes, and finally rolling it in panko.
  3. Heat oil in a large skillet over medium heat and fry tenders for about 2–3 minutes per side until golden brown.
  4. Drain on a wire rack before serving.
