Ingredients
- 2 chicken breasts (boneless, skinless, cut into bite size chunks)
- 1 cup all purpose flour
- 1 cup buttermilk
- 1 large egg
- 1 cup panko breadcrumbs
- ½ cup tempura batter mix
- 1 tablespoon garlic powder
- 2 teaspoons Slap Ya Mama® seasoning
- 1 teaspoon ground black pepper
- ½ teaspoon red pepper flakes
- 1–2 cups vegetable oil
- 3 avocados (diced)
- 8 strips Applewood bacon (cooked until crispy)
- 1 cup grape tomatoes (sliced in half)
- ½ cup red onion (diced small)
- 1–2 cups cheddar cheese (shredded)
- 3 cups iceberg lettuce (cut into bite size pieces)
- 3 cups Romaine lettuce (cut into bite size pieces)
- 3 cups leafy green lettuce (cut into bite size pieces)
- ¼ cup Dijon mustard or yellow mustard
- ¼ cup olive oil
- ¼ cup lemon juice
- 2 tablespoons honey
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
Instructions
- Prepare the honey mustard dressing by mixing all ingredients in a cruet or salad shaker. Refrigerate until ready.
- Set up three shallow containers: one with flour, one with a whisked mixture of buttermilk and egg, and one with panko breadcrumbs mixed with seasonings.
- Heat oil in a frying pan over medium heat. Coat chicken pieces in flour, dip into the buttermilk mixture, then coat with breadcrumb mix.
- Fry chicken until golden brown on all sides (4-6 minutes). Remove and drain on paper towels.
