  • 1 cup buttermilk
  • 1 large egg
  • 1 cup panko breadcrumbs
  • ½ cup tempura batter mix

  • 2 teaspoons Slap Ya Mama® seasoning
  • 1 teaspoon ground black pepper
  • ½ teaspoon red pepper flakes
  • 12 cups vegetable oil
  • 3 avocados (diced)
  • 8 strips Applewood bacon (cooked until crispy)
  • 1 cup grape tomatoes (sliced in half)
  • ½ cup red onion (diced small)
  • 12 cups cheddar cheese (shredded)
  • 3 cups iceberg lettuce (cut into bite size pieces)
  • 3 cups Romaine lettuce (cut into bite size pieces)
  • 3 cups leafy green lettuce (cut into bite size pieces)
  • ¼ cup Dijon mustard or yellow mustard
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 2 tablespoons honey
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the honey mustard dressing by mixing all ingredients in a cruet or salad shaker. Refrigerate until ready.
  2. Set up three shallow containers: one with flour, one with a whisked mixture of buttermilk and egg, and one with panko breadcrumbs mixed with seasonings.
  3. Heat oil in a frying pan over medium heat. Coat chicken pieces in flour, dip into the buttermilk mixture, then coat with breadcrumb mix.
  4. Fry chicken until golden brown on all sides (4-6 minutes). Remove and drain on paper towels.
  5. Toss together lettuce, cheese, onions, tomatoes, bacon, avocado, and crispy chicken in a large bowl. Drizzle with dressing before serving.
