Ingredients
- 3 cups cooked, shredded chicken
- 1 cup Monterey Jack cheese
- 1 cup cheddar cheese
- 4 tbsp unsalted butter
- 2 cups chicken broth
- 1 cup sour cream
- 12 small flour tortillas
Instructions
- Sauté diced onion in a skillet until translucent. Add minced garlic and cook for another minute.
- In a mixing bowl, combine shredded chicken with sautéed onions, garlic, cumin, chili powder, salt, and pepper.
- In the same skillet, melt butter and whisk in flour until smooth. Gradually add chicken broth while whisking until thickened. Stir in sour cream and green chilies.
- Preheat oven to 350°F (175°C). Spread sauce on the bottom of a baking dish. Fill tortillas with chicken mixture and roll tightly.
- Place rolled tortillas seam-side down in the dish, pour remaining sauce over them, top with cheese, and bake for 25 minutes.
