  • 2 tablespoons olive oil (divided)
  • 3/4 pound dried fettuccine
  • 5 cloves garlic (minced)
  • 1/2 cup julienned sun-dried tomatoes
  • 14.5 ounce can of petite diced tomatoes (drained)
  • 1 tablespoon tomato paste
  • 2 tablespoons granulated sugar
  • 1/2 cup plain 2% or full fat Greek yogurt
  • 1/4 cup sour cream
  • Salt and pepper (to taste)
  • ½ cup grated parmesan cheese
  • 1 1/2 cups baby spinach
  • 1 cup reserved pasta water
  • Crushed red pepper flakes (optional)

Instructions

  1. Boil water in a large stockpot; add olive oil and cook fettuccine according to package instructions. Drain, reserving 1 cup pasta water.
  2. Mix Greek yogurt and sour cream in a bowl; set aside.
  3. In a skillet, heat remaining olive oil over medium-high heat; sauté garlic and sun-dried tomatoes until fragrant.
  4. Add diced tomatoes, tomato paste, and sugar; stir well.
  5. Whisk in the yogurt-sour cream mixture, simmering until thickened.
  6. Stir in spinach and parmesan cheese; add cooked fettuccine and toss well.
  7. Adjust sauce consistency with reserved pasta water as needed.
