Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1½ cups whole milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper (to taste)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon thyme

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a large skillet, heat olive oil over medium-high heat; sear chicken for 4-5 minutes on each side until golden brown. Remove from skillet.
  3. In a medium saucepan, boil chicken broth and salt; add rice, cover, reduce heat to low, and simmer for about 15-18 minutes until tender.
  4. In the same skillet, melt butter over medium heat; whisk in flour until lightly golden.
  5. Gradually add milk and chicken broth while whisking; stir in garlic powder, thyme, cheddar cheese, and Parmesan until thickened.
  6. Return chicken to skillet; spoon sauce over it and simmer for about 10 minutes until fully cooked.
  7. Serve over rice with garnished parsley.
