  • 1 whole rotisserie chicken (shredded)
  • 4 cups broccoli florets (fresh or frozen)

  • 1 medium yellow onion (diced)
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1 cup Parmesan cheese (grated)
  • 1/2 cup mozzarella cheese (shredded)

Instructions

  1. Cook penne pasta according to package instructions in a large pot of salted boiling water. Add broccoli florets in the last 3 minutes of cooking.
  2. Reserve 1 cup of pasta water before draining the pasta and broccoli; set aside.
  3. In a skillet, heat olive oil and butter over medium-low heat. Sauté diced onion for 4-5 minutes until softened; add minced garlic for another 30 seconds.
  4. Pour in heavy cream and broth, simmering gently for 2-3 minutes.
  5. Remove from heat and whisk in Parmesan and mozzarella until smooth. Season with Italian seasoning, garlic powder, salt, pepper, and red pepper flakes.
  6. Toss drained pasta and broccoli with the sauce; fold in shredded rotisserie chicken.
