  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup ditalini pasta
  • Dried basil, oregano, salt, and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and brown the Italian sausage until cooked through. Remove and set aside.
  2. In the same pot, sauté chopped onion and minced garlic until translucent.
  3. Add diced tomatoes, chicken stock, dried basil, oregano, and the browned sausage back to the pot. Simmer for about 10 minutes.
  4. Stir in ditalini pasta and cook according to package instructions until al dente.
  5. Lower heat and mix in heavy cream and grated Parmesan cheese until melted. Season with salt and pepper.
  6. Serve hot, garnished with fresh parsley.
