Ingredients
- 1 lb Italian sausage
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 quarts chicken stock
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup ditalini pasta
- Dried basil, oregano, salt, and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat and brown the Italian sausage until cooked through. Remove and set aside.
- In the same pot, sauté chopped onion and minced garlic until translucent.
- Add diced tomatoes, chicken stock, dried basil, oregano, and the browned sausage back to the pot. Simmer for about 10 minutes.
- Stir in ditalini pasta and cook according to package instructions until al dente.
- Lower heat and mix in heavy cream and grated Parmesan cheese until melted. Season with salt and pepper.
