  • 8 ounces uncooked fettuccine or linguine
  • 1 tablespoon butter
  • 1/2 tablespoon olive oil
  • 8 ounces cremini mushrooms (sliced thin)
  • 2 cloves garlic (minced)
  • 1/3 cup dry white wine
  • 1/4 teaspoon Italian seasoning
  • 1 cup heavy cream
  • Salt & pepper (to taste)
  • Fresh parsley (chopped, to taste)

Instructions

  1. Boil salted water in a large pot and cook pasta al dente according to package instructions. Drain and set aside.
  2. In a skillet over medium-high heat, melt butter with olive oil. Sauté sliced mushrooms and minced garlic for about 5 minutes until mushrooms release their moisture.
  3. Remove mushrooms from the skillet and add white wine, Italian seasoning, flour, and Dijon mustard. Stir to form a smooth paste.
  4. Gradually stir in heavy cream and let simmer for a few minutes until slightly thickened. Return sautéed mushrooms to the skillet; season with salt and pepper.
  5. Toss cooked pasta with the creamy sauce, adding chopped parsley before serving.
