  • 2 servings udon noodles (vacuum pack)
  • 2 tbsp butter
  • ½ medium onion (sliced)
  • 3 cloves garlic (sliced)
  • 4 shiitake mushrooms
  • â…“ cup water
  • 1 tbsp soy sauce
  • 2 tbsp white miso paste
  • ¼ cup heavy cream
  • ¾ cup milk
  • 90 g beef brisket
  • 2 poached eggs

Instructions

  1. Boil udon noodles as per package instructions. Strain and rinse under cold water; set aside.
  2. In a sauté pan, heat butter over medium heat. Add onion, garlic, and shiitake mushrooms; sauté until fragrant.
  3. Stir in water and soy sauce; mix well. Strain the mixture into a bowl and return to the pan.
  4. Add miso paste to the broth, stirring until fully dissolved. Incorporate heavy cream and milk; gently boil before adding beef brisket until cooked through.
  5. Serve warm udon noodles in bowls, pouring over the creamy broth and garnishing with cooked beef brisket and desired toppings.
