  • 6 oz pasta (Italian small shells)
  • 1 cup heavy whipping cream
  • 1/21 cup grated parmesan reggiano cheese
  • 2 1/23 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced chicken seasoned with Italian seasoning, salt, and pepper; cook until browned (4–5 minutes).
  2. Add onions, carrots, celery, sundried tomatoes, and garlic; sauté until vegetables are translucent (3–4 minutes).
  3. Sprinkle flour over the mixture and stir well; if using tomato paste, add it now.
  4. Gradually whisk in chicken broth while stirring to avoid lumps.
  5. Bring to a boil; add pasta and simmer covered for 20 minutes until chicken is tender.
  6. Stir in heavy cream, spinach, and grated Parmesan cheese; simmer for an additional 5 minutes.
  7. Taste and adjust seasoning before serving hot.
