  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic (minced)

  • 4 cups chicken or beef broth
  • 1 cup small pasta (such as ditalini)
  • 1/2 cup heavy cream
  • Fresh spinach or basil (optional)

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix gently and form into small meatballs.
  2. Heat olive oil in a large pot over medium heat and brown the meatballs for about 2–3 minutes on each side. Set aside.
  3. In the same pot, sauté diced onion and celery until softened. Add diced tomatoes and broth; season with Italian seasoning, salt, and pepper.
  4. Return the meatballs to the pot and simmer for about 15 minutes.
  5. Stir in pasta and cook for another 8–10 minutes until tender.
  6. Reduce heat and stir in heavy cream until heated through.
  7. Finish with fresh spinach or basil before serving hot.
