Ingredients
- ½ pound Penne pasta
- 1 tablespoon Olive oil
- 2 Garlic cloves (minced)
- 1 pound Boneless skinless chicken breast (cut into bite-sized chunks)
- ½ cup Basil pesto
- 1 cup Chicken broth
- 1 cup Half and half
- ½ cup Freshly grated Parmesan cheese
- 1 cup Freshly shredded Mozzarella cheese
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add diced chicken and season with salt and pepper; cook until no longer pink.
- In the same skillet, melt butter, whisk in flour, then gradually add chicken broth and half & half until the sauce thickens.
- Stir in basil pesto and cheeses until melted. Add cooked pasta and chicken back to the skillet; mix well to coat.
