  • 8 oz linguine
  • 1 cup half and half
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 roma tomato, diced small
  • 1/4 cup parmigiano reggiano
  • Salt and pepper to taste

Instructions

  1. Season shrimp with salt, pepper, and half the Cajun seasoning.
  2. Cook linguine according to package instructions; set aside.
  3. In a large skillet over medium heat, melt butter with oil.
  4. Add shrimp in a single layer; cook for 2 minutes without stirring.
  5. Add garlic; flip shrimp and cook until they turn pink (1-2 more minutes).
  6. Stir in half and half and parmesan; bring to a low boil while whisking for about 2 minutes.
  7. Toss in cooked linguine along with remaining Cajun seasoning, diced tomatoes, and parsley.
