  • 3/4 cup cottage cheese (whole milk works best)
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/3 cup pumpkin puree
  • 2 large eggs
  • 1 1/2 cup all-purpose flour (or gluten-free all-purpose flour)
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons pumpkin spice
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips (or regular)
  • 1/2 cup maple syrup (for Regular Chocolate Chip version)
  • 1/4 cup applesauce
  • 2 Tablespoons coconut oil (melted and cooled)
  • 1/2 cup mini chocolate chips (or regular for Regular Chocolate Chip version)

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with liners.
  2. In a blender, combine cottage cheese, maple syrup, vanilla extract, eggs, and pumpkin puree (if making the pumpkin version). Blend until smooth.
  3. In a bowl, mix together flour, baking powder, and salt.
  4. Pour the blended mixture into the dry ingredients and stir gently until just combined.
  5. Fold in chocolate chips.
  6. Fill muffin liners three-fourths full with batter.
  7. Bake for 25–30 minutes until golden brown and a toothpick comes out clean.
  8. Let cool on a wire rack before enjoying.
