Ingredients
- 2 cups white sugar
- 1 cup light brown sugar
- 1 cup vegetable oil
- 4 eggs, beaten
- 15 oz can pure pumpkin puree
- 3 ½ cups all-purpose flour
- 2 tsp baking soda
- 1½ tsp salt
- 2 tsp ground cloves
- 1 tsp pumpkin pie spice
- ½ tsp ground nutmeg
- 2–4 tbsp pepitas (pumpkin seeds), chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix white sugar, brown sugar, vegetable oil, eggs, and pumpkin puree until combined. Stir in water.
- In another bowl, whisk together flour, baking soda, salt, cloves, pumpkin pie spice, and nutmeg.
- Gradually add the dry mixture to the wet ingredients; stir gently until just mixed.
- Grease two loaf pans or line them with parchment paper. Divide batter between pans and sprinkle pepitas on top.
- Bake for about one hour or until a toothpick inserted comes out clean.
- Allow to cool in pans for about 10 minutes before transferring to wire racks.
