  • 1 cup light brown sugar
  • 1 cup vegetable oil
  • 4 eggs, beaten
  • 15 oz can pure pumpkin puree
  • 3 ½ cups all-purpose flour
  • 2 tsp baking soda
  • 1½ tsp salt
  • 2 tsp ground cloves
  • 1 tsp pumpkin pie spice
  • ½ tsp ground nutmeg
  • 24 tbsp pepitas (pumpkin seeds), chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix white sugar, brown sugar, vegetable oil, eggs, and pumpkin puree until combined. Stir in water.
  3. In another bowl, whisk together flour, baking soda, salt, cloves, pumpkin pie spice, and nutmeg.
  4. Gradually add the dry mixture to the wet ingredients; stir gently until just mixed.
  5. Grease two loaf pans or line them with parchment paper. Divide batter between pans and sprinkle pepitas on top.
  6. Bake for about one hour or until a toothpick inserted comes out clean.
  7. Allow to cool in pans for about 10 minutes before transferring to wire racks.
