  • 1 lb dried red beans
  • 14 oz andouille sausage, sliced
  • ½ lb smoked ham, cubed
  • 1 medium onion, chopped
  • 2 jalapenos, finely chopped
  • 6 cloves garlic, minced
  • 4 bay leaves
  • ¼ cup red wine vinegar
  • 2 tbsp whole grain mustard
  • 1 tbsp Kosher salt
  • 2 tsp thyme seeds, dried
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • Steamed white rice
  • Scallions, thinly sliced, for garnish
  • Hot sauce, for garnish

Instructions

  1. Soak the red beans overnight in water; drain before cooking.
  2. In a large stock pot, combine soaked beans, ham bone, bay leaves, and 16 cups of water. Bring to a simmer over medium heat.
  3. In a skillet over medium-high heat, brown the sliced sausage and cubed ham for about 8–10 minutes.
  4. Add chopped onion and jalapenos to the skillet; cook until softened (about 5 minutes).
  5. Stir in diced tomato, minced garlic, mustard, vinegar, salt, thyme seeds, black pepper, and cayenne; cook until heated through (5–8 minutes).
  6. Add the meat mixture to the pot of simmering beans. Simmer uncovered for about 3 hours while stirring occasionally.
  7. Ten minutes before finishing, mash some beans against the pot's sides for creaminess.
  8. Remove bones and bay leaves before serving over steamed rice.
