  • 5.2 oz dry noodles (any type)
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic (minced)
  • 1/2 small shallot (or red onion)
  • 1 tbsp sugar
  • 1 tsp curry powder
  • 1/2 tbsp chili powder (optional)
  • 1/4 cup olive oil
  • 1.5 to 2 tbsp vegetarian mushroom oyster sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp lime juice

Instructions

  1. Cook dry noodles according to package instructions until slightly undercooked. Drain and rinse with cold water; set aside.
  2. In a large heatproof bowl, combine chopped cilantro, garlic, shallot, curry powder, sugar, and optional chili powder.
  3. Heat olive oil in a pot over medium heat until hot; test with a piece of garlic.
  4. Pour hot oil over the mixture in the bowl and mix thoroughly.
  5. Add mushroom oyster sauce, dark soy sauce, and lime juice; stir to combine.
  6. Toss cooked noodles in the sauce until evenly coated; taste and adjust seasoning if needed.
  7. Serve hot, optionally garnished with chili oil or sesame seeds.
