  • 1/3 cup white sugar
  • 2/3 cup brown sugar
  • 3 eggs
  • 1/4 tsp peppermint extract
  • 1 1/3 cup all-purpose flour
  • 2/3 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp espresso powder
  • 3/4 cup milk (whole or 2%)
  • 1/2 cup dark chocolate chips
  • 2 cups powdered sugar
  • 4 tbsp milk (whole or 2%)
  • 1/4 tsp peppermint extract
  • 1 tbsp Greek yogurt
  • 3 tbsp crushed candy canes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, white sugar, and brown sugar until smooth.
  3. Mix in baking powder, baking soda, espresso powder, salt, and cocoa powder until well combined.
  4. Beat in eggs one at a time followed by peppermint extract.
  5. Gradually add flour and milk alternately to the batter until just combined.
  6. Fold in dark chocolate chips gently with a rubber spatula.
  7. Pour batter into a greased or parchment-lined loaf pan and smooth the top.
  8. Bake for about 50–60 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the bread to cool completely before frosting with a mixture of powdered sugar, milk, peppermint extract, Greek yogurt, and crushed candy canes.
