- 1 cup granulated sugar
- 1/4 cup brown sugar
- 3 tablespoons baking cocoa powder (Ghirardelli)
- 5 large eggs
- 3/4 cup heavy whipping cream
- 2 teaspoons vanilla extract
- 6 oz semi-sweet chocolate bar (for ganache + shavings)
- 2/3 cups heavy whipping cream
- 2 tablespoons butter (melted)
- Reddi-Wip (for garnish)

Instructions
- Preheat the oven to 325°F.
- To prepare the crust, mix crushed graham crackers, granulated sugar, cocoa powder, and melted butter. Press into the bottom of a springform pan.
- For the filling, melt the bittersweet chocolate and let cool slightly. Beat cream cheese until smooth; add sugars and cocoa powder. Mix in eggs one at a time, followed by heavy cream and vanilla. Fold in the melted chocolate.
- Pour filling over the crust and bake on a baking sheet for about 130 minutes or until set but slightly wobbly in the center.
- Let cool before refrigerating for at least four hours.
- Prepare ganache by heating cream until simmering; pour over chopped semi-sweet chocolate until smooth.
- Drizzle ganache over chilled cheesecake and garnish as desired before slicing.
