  • 6 cups Rice Krispies cereal
  • 1/4 cup unsalted butter
  • 10 oz mini marshmallows
  • 1 tsp vanilla extract
  • 1 cup maraschino cherries, chopped
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil (optional)

Instructions

  1. In a large pot over medium heat, melt the butter. Once melted, add the mini marshmallows and stir until smooth. Mix in the vanilla extract.
  2. Remove from heat and quickly stir in the Rice Krispies and chopped cherries until fully combined.
  3. Grease a 9×13-inch baking dish or line with parchment paper. Pour the mixture into the dish and press down evenly with a greased spatula. Allow to cool completely.
  4. Melt chocolate chips with coconut oil (if using) in a microwave-safe bowl in 30-second intervals until smooth.
  5. Drizzle or dip cooled treats into melted chocolate and place on parchment paper to set.
  6. Once hardened, slice into squares and serve.
