- 6 cups Rice Krispies cereal
- 1/4 cup unsalted butter
- 10 oz mini marshmallows
- 1 tsp vanilla extract
- 1 cup maraschino cherries, chopped
- 1 1/2 cups semi-sweet chocolate chips
- 1 tbsp coconut oil (optional)
Instructions
- In a large pot over medium heat, melt the butter. Once melted, add the mini marshmallows and stir until smooth. Mix in the vanilla extract.
- Remove from heat and quickly stir in the Rice Krispies and chopped cherries until fully combined.
- Grease a 9×13-inch baking dish or line with parchment paper. Pour the mixture into the dish and press down evenly with a greased spatula. Allow to cool completely.
- Melt chocolate chips with coconut oil (if using) in a microwave-safe bowl in 30-second intervals until smooth.
- Drizzle or dip cooled treats into melted chocolate and place on parchment paper to set.
