Ingredients
- 2/3 cup packed light brown sugar
- 2 Tbsp black cocoa powder
- 1 tsp ground cinnamon
- 1/4 cup unsalted butter, softened
- 3 1/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder, sifted
- 2 tsp or 1 packet instant dry yeast
- 1 tsp fine salt
- 1 tsp instant espresso or coffee
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, room temperature
- 1 large egg, room temperature
- 1 Tbsp unsalted butter, room temperature for glaze
- 2/3 cup milk or dark chocolate chips
- 3 Tbsp whole milk for glaze
- 1 cup powdered sugar
- 1 tsp vanilla extract or vanilla bean paste
Instructions
- Preheat your oven to 200°F (95°C) to create an ideal rising environment for the dough.
- In a bowl, mix together light brown sugar, black cocoa powder, and ground cinnamon for the filling.
- In a large bowl or stand mixer, combine all-purpose flour, unsweetened cocoa powder, instant dry yeast, coffee, and salt.
- Warm whole milk with granulated sugar and softened butter in the microwave until warm but not boiling. Mix this into the dry ingredients.
- Add the egg and knead until smooth and elastic, adding extra flour as needed.
- Let the dough rest covered for 15 minutes before rolling it out into a rectangle.
- Spread softened butter over the dough, sprinkle with filling, roll tightly, and cut into equal pieces.
- Allow to rise in a turned-off oven for 30 minutes before baking at 350°F (175°C) for 26–32 minutes.
- Prepare the glaze by melting butter and chocolate chips with milk; stir in powdered sugar until smooth.
- Drizzle glaze over cooled rolls before serving warm.
