Ingredients

  • 2 cups shredded rotisserie chicken breast
  • 1 head romaine lettuce, shredded
  • 1 head iceberg lettuce, shredded
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/4 cup thinly-sliced green onions
  • 3 tablespoons chopped cilantro (optional)
  • Asian salad dressing (see recipe)
  • crushed red pepper flakes
  • sesame seeds
  • slivered almonds
  • crispy wonton strips

Instructions

  1. In a large mixing bowl, combine shredded chicken with half of the Asian dressing; toss and let sit for 10 minutes.
  2. Add romaine lettuce, iceberg lettuce, red cabbage, carrots, green onions, and cilantro; toss until well mixed.
  3. Just before serving, pour the remaining dressing over the salad and toss gently to coat.
  4. Garnish with crushed red pepper flakes, sesame seeds, slivered almonds, and crispy wonton strips.
