- 2 tablespoons plus 1/4 cup dry white wine or chicken broth

- 1/2 cup grated Parmesan cheese
- 3 teaspoons olive oil
- 2 tablespoons butter

- Flatten the chicken to a thickness of 1/4 inch. In one bowl, mix egg substitute, wine, lemon juice, garlic, and hot pepper sauce. In another bowl, combine flour, Parmesan cheese, and salt.
- Coat each chicken piece in the flour mixture, dip in the egg mixture, and coat again with flour.
- Heat olive oil in a nonstick skillet over medium heat. Cook four chicken breasts at a time until browned (about 3–5 minutes per side). Keep warm and repeat with remaining chicken.
- In the same skillet, melt butter over medium heat. Add remaining wine and lemon juice; simmer until reduced by one-fourth.
- Drizzle the sauce over the cooked chicken before serving.
