  • 8 boneless skinless chicken breast halves (4 ounces each)
  • 1/2 cup egg substitute
  • 2 tablespoons plus 1/4 cup dry white wine or chicken broth
  • 5 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 3 teaspoons olive oil
  • 2 tablespoons butter
  • Salt and hot pepper sauce to taste

Instructions

  1. Flatten the chicken to a thickness of 1/4 inch. In one bowl, mix egg substitute, wine, lemon juice, garlic, and hot pepper sauce. In another bowl, combine flour, Parmesan cheese, and salt.
  2. Coat each chicken piece in the flour mixture, dip in the egg mixture, and coat again with flour.
  3. Heat olive oil in a nonstick skillet over medium heat. Cook four chicken breasts at a time until browned (about 3–5 minutes per side). Keep warm and repeat with remaining chicken.
  4. In the same skillet, melt butter over medium heat. Add remaining wine and lemon juice; simmer until reduced by one-fourth.
  5. Drizzle the sauce over the cooked chicken before serving.
