  • 1/2 cup torn soft white bread
  • 2 tablespoons whole milk
  • 1 large egg
  • 1 shallot, finely chopped
  • 2 tablespoons chopped capers
  • 1 teaspoon grated lemon zest
  • 1/2 teaspoon kosher salt
  • Freshly squeezed lemon juice

Instructions

  1. Preheat the broiler to high and prepare a baking sheet with olive oil.
  2. In a bowl, mix torn bread, milk, cheese, and egg until combined.
  3. Add shallot, capers, lemon zest, salt, parsley, and ground chicken; mix gently.
  4. Form into 1½ tablespoon-sized meatballs and place on the baking sheet.

  6. Sauté shallots in olive oil for the sauce; add flour, broth, lemon juice, and simmer.
  7. Stir in meatballs; cover and simmer for an additional 5 minutes before serving.
