  • 2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 2 1/2 cups chicken broth
  • 1 1/4 cups white long grain rice (uncooked)
  • 23 cups fresh broccoli florets (uncooked)
  • 10.5 oz. condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup crushed Ritz crackers
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 350°F.
  2. In a large pot, melt butter over medium heat and cook bite-sized chicken pieces until golden brown. Remove from pot.
  3. Add chicken broth and rice to the pot; bring to a boil then simmer covered for 6 minutes.
  4. Layer fresh broccoli on top of the rice; cover and cook for another 9 minutes or until liquid is absorbed.
  5. Remove from heat and let sit covered for 10 minutes.
  6. Stir in cooked chicken, cream of chicken soup, milk, sour cream, half the cheddar cheese, and seasonings.
  7. Transfer to a greased casserole dish and top with remaining cheese.
  8. Bake covered for 15 minutes.
