  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion; cook until beef is browned and onions are translucent (8-10 minutes). Drain excess grease.
  2. Stir in minced garlic and taco seasoning; cook for about 30 seconds until fragrant.
  3. Add beef broth, Rotel, and tomato paste; bring to a boil.
  4. Stir in dry rice and return to boil. Cover and reduce heat; simmer undisturbed for 15 minutes.
  5. Sprinkle shredded cheese over the rice mixture; cook for an additional 5 minutes until melted.
