  • 12 ounces shredded cheese blend (cheddar, Monterey Jack, mozzarella)
  • 6 flour tortillas (78 inches)
  • 1/2 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground chipotle chili pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cayenne pepper (optional)
  • 1 tablespoon tomato paste
  • 2 tablespoons unsalted beef stock/broth
  • 2 tablespoons vegetable oil (to grease pan)

Instructions

  1. Preheat your oven to 200°F (93°C) to keep cooked quesadillas warm.
  2. In a non-stick frying pan, heat olive oil over medium heat and cook ground beef with spices until browned (8–10 minutes).
  3. Stir in tomato paste and beef broth; cook for another 2 minutes.
  4. On one half of each tortilla, layer cheese and then the beef mixture; fold over.
  5. Cook quesadillas in a greased pan over medium-low heat for 2 minutes per side until golden brown and crispy.
