- 1 pound lean ground beef
- 1 medium onion (chopped)
- 4 cloves garlic (minced)
- 1 cup frozen mixed vegetables
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1 cup milk (2% recommended)
- 1/2 cup sour cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- 2 cups shredded cheddar cheese (divided)
Instructions
- Preheat your oven to 400°F.
- In a greased 9×13 casserole dish, layer the peeled and diced potatoes.
- In a large skillet, brown the ground beef and chopped onions over medium heat for about 8–10 minutes. Drain excess fat if necessary.
- Add minced garlic and frozen mixed vegetables to the skillet; cook for an additional 2–3 minutes and season with salt and pepper.
- Pour this mixture over the potatoes in the casserole dish.
- In a mixing bowl, combine cream of mushroom soup, milk, sour cream, Worcestershire sauce, Italian seasoning, and half of the cheddar cheese; mix well.
- Pour the sauce over the beef and potato layers and stir gently to combine.
- Cover with aluminum foil and bake for 45 minutes.
- Remove foil, sprinkle remaining cheese on top, and bake uncovered for an additional 10–15 minutes until cheese is melted.
