  • 1 tablespoon olive oil
  • 1 pound ribeye steak, thinly sliced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1 cup provolone cheese, shredded
  • 1/4 cup Parmesan cheese

Instructions

  1. Boil the tortellini in salted water according to package instructions; drain and set aside.
  2. In a skillet, heat olive oil and cook the ribeye steak for about 3-4 minutes until browned; remove from skillet.
  3. Sauté onions and bell peppers in the same skillet for 5-6 minutes; add garlic and cook for another minute.
  4. Season with salt and pepper; add beef broth and simmer for 2-3 minutes.
  5. Lower heat and stir in heavy cream until thickened; mix in provolone and Parmesan cheeses until smooth.
  6. Return steak to skillet; toss in tortellini until well coated; heat through.
