  • 1 pound dried pinto beans
  • 8 ounces bacon, diced
  • 1 cup cubed cooked ham
  • ½ yellow onion, diced
  • 3 Roma tomatoes, diced
  • 1 jalapeño, diced
  • 2 cloves garlic, minced
  • 1 chipotle pepper in adobo sauce, minced
  • Kosher salt, to taste
  • ½ teaspoon ground cumin
  • Chopped cilantro, for serving
  • 2 cloves garlic, smashed
  • 2 bay leaves
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon dried Mexican oregano
  • Water, as needed

Instructions

  1. Rinse the pinto beans under cold water and sort through them to remove any impurities.
  2. In a large pot or Dutch oven, combine the rinsed beans with diced onion, smashed garlic cloves, bay leaves, salt, oregano, and enough water to cover by three inches.
  3. Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer for 1½ to 2 hours until beans are soft.
  4. Reserve four cups of cooking liquid; discard bay leaves.
  5. In the same pot, cook bacon until crispy. Add ham, onions, and jalapeños; sauté until onions are translucent.
  6. Stir in garlic for 30 seconds before adding tomatoes, chipotle pepper, cumin, and reserved cooking liquid.
  7. Add beans back into the pot; bring everything to a boil again. Adjust seasoning if needed.
  8. Serve warm garnished with chopped cilantro.
