  • 2 cups shredded carrots
  • 8 oz cream cheese (cold)
  • 8 Tbsp butter (room temperature)
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 375°F and line a jelly roll pan with parchment paper.
  2. In one bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, beat eggs with sugar, oil, and vanilla until well combined. Gradually add the dry mixture and fold in shredded carrots.
  4. Spread the batter evenly in the prepared pan and bake for about 10-13 minutes until set.
  5. Immediately roll the cake in its parchment paper from one short end to the other and let it cool for about 10 minutes before unrolling.
  6. To make the frosting, beat cream cheese until smooth, then mix in room temperature butter, powdered sugar, and vanilla until creamy.
  7. Unroll the cooled cake gently and spread cream cheese frosting over it before rolling it back up tightly.
  8. Wrap in plastic wrap and chill before slicing.
