- 1 cup shredded carrots
- For the cream cheese layer: 4 ounces room temperature cream cheese
- 1/4 cup granulated sugar
- 1 large egg yolk
- 3/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F and prepare an 8×8 baking pan with non-stick spray or parchment paper.
- In one bowl, mix melted butter and brown sugar until smooth. Incorporate the egg and vanilla extract.
- In another bowl, whisk together flour, cinnamon, baking powder, and salt. Gradually add this mixture to the wet ingredients until combined. Gently fold in shredded carrots.
- Spread the batter in the prepared pan and bake for 25 minutes.
- While baking, blend cream cheese and granulated sugar until smooth; add egg yolk and vanilla.
- After the base has baked for 25 minutes, pour the cream cheese mixture on top and return it to the oven for an additional 15 minutes.
