Description

  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • For the cream cheese layer: 4 ounces room temperature cream cheese
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 3/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare an 8×8 baking pan with non-stick spray or parchment paper.
  2. In one bowl, mix melted butter and brown sugar until smooth. Incorporate the egg and vanilla extract.
  3. In another bowl, whisk together flour, cinnamon, baking powder, and salt. Gradually add this mixture to the wet ingredients until combined. Gently fold in shredded carrots.
  4. Spread the batter in the prepared pan and bake for 25 minutes.
  5. While baking, blend cream cheese and granulated sugar until smooth; add egg yolk and vanilla.
  6. After the base has baked for 25 minutes, pour the cream cheese mixture on top and return it to the oven for an additional 15 minutes.
  7. Cool completely before slicing into squares.
