  • 1 cup shredded zucchini

  2. Squeeze excess moisture from the shredded zucchini using a kitchen towel.
  3. In a large bowl, whisk together the melted butter and sugar. Add eggs, orange juice, and vanilla; mix until well combined.
  4. In another bowl, combine flour, salt, baking powder, baking soda, and cinnamon.
  5. Gradually fold the dry ingredients into the wet mixture. Gently stir in carrots, zucchini, and diced apple until just combined.
  6. Divide the batter evenly between the prepared loaf pans and bake for about 55-60 minutes or until a toothpick inserted comes out clean.
