  • 6 bone-in, skin-on chicken thighs (or drumsticks)
  • 2 tablespoons vegetable oil (or coconut oil)
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium tomato, chopped
  • 1 Scotch bonnet pepper (whole or minced)
  • 1½ cups long-grain white rice
  • 1½ cups chicken broth
  • 1 cup coconut milk
  • Fresh thyme, salt, and spices

Instructions

  1. Marinate chicken thighs with salt, black pepper, paprika, ground allspice, garlic powder, and onion powder for at least 15 minutes.
  2. In a Dutch oven over medium heat, add oil and sauté chopped onions until translucent. Add minced garlic and cook until fragrant.
  3. Stir in diced bell peppers and chopped tomatoes; cook until softened.
  4. Brown the marinated chicken in the pot for about five minutes on each side.
  5. Add Scotch bonnet pepper, thyme, smoked paprika, rice, chicken broth, coconut milk, and salt; stir gently to combine.
  6. Bring to a boil; then reduce heat to low and cover tightly. Simmer for 30–35 minutes until rice is cooked and liquid absorbed.
  7. If using peas, stir them in during the last five minutes of cooking. Fluff rice before serving and garnish with sliced green onions and fresh cilantro.
