  • 2 chopped bell peppers
  • 1 ½ cups uncooked rice
  • 2 sweet potatoes, cubed
  • 1 avocado, cubed
  • 1 can black beans, drained

  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  2. Preheat the oven to 415°F (210°C). On a baking sheet lined with parchment paper, toss sweet potato cubes with olive oil, Cajun seasoning, salt, and pepper. Roast for about 20 minutes until tender.
  3. In a skillet over medium heat, sauté onions and bell peppers in olive oil until softened. Add drained black beans and warm through.
  4. Assemble your bowl: start with rice, layer on roasted sweet potatoes, add black beans, top with avocado cubes, and drizzle with tahini sauce.
