Ingredients
- 14 oz. Andouille sausage
- 1 Tbsp cooking oil
- 1 bell pepper
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp dried thyme
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ⅛ tsp cayenne pepper
- ⅛ tsp black pepper (freshly cracked)
- 15 oz. fire roasted diced tomatoes (1 can)
- 1 cup long grain white rice (uncooked)
- 1½ cups chicken broth
- 2 green onions (sliced)
Instructions
- In a deep skillet, heat oil over medium heat. Add sliced Andouille sausage and cook until browned (5-7 minutes).
- Dice the bell pepper and add to the skillet; sauté for another minute.
- Stir in smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, and black pepper; sauté for one minute.
- Add fire-roasted diced tomatoes (with juices), uncooked rice, and chicken broth; stir well.
- Cover with a lid, bring to a boil over medium-high heat, then reduce to low and let simmer for 20 minutes.
- Remove from heat and let sit covered for an additional 5 minutes before stirring in sliced green onions.
