  • 1/4 cup + 3 tbsp all-purpose flour
  • 3 1/4 cups low-fat milk (then more to thin if desired)
  • 1 (14.5 oz) can low-sodium chicken broth
  • 1/2 cup heavy cream
  • 3 cups (packed) finely chopped fresh broccoli florets
  • 10 oz (2 1/2 cups) sharp cheddar cheese (or extra sharp cheddar cheese, plus more for serving)
  • 1 oz (1/3 cup) finely shredded Parmesan cheese
  • salt and freshly ground black pepper (to taste)

Instructions

  1. Melt butter in a large pot over medium-high heat. Sauté chopped onions for 4–5 minutes until soft.
  2. Add minced garlic and flour; cook while stirring for 1 minute.
  3. Gradually whisk in low-fat milk and chicken broth, then stir in chopped broccoli.
  4. Cook until thickened, about 6–8 minutes on low heat until the broccoli is tender.
  5. Remove from heat; stir in heavy cream, sharp cheddar, and Parmesan until melted.
  6. Season with salt and pepper to taste. Serve warm.
