Ingredients
- 1/2 pound ground breakfast sausage
- 6 large eggs (beaten)
- 8 slices Colby-Jack cheese
- 4 tablespoons soft butter (divided)
- 8 slices sourdough bread
Instructions
- In a non-stick skillet over medium heat, cook the ground sausage until no longer pink. Drain and set aside.
- In the same skillet, melt 2 tablespoons of butter and scramble the beaten eggs until set. Remove from heat.
- Combine the cooked sausage and scrambled eggs in a bowl.
- Butter one side of each slice of sourdough bread. In the skillet, place one slice butter-side down, layer with cheese, add the sausage-egg mixture, top with more cheese, and cover with another slice of bread butter-side up.
