  • ¾ cup peach preserves
  • ¼ cup bourbon
  • 4 salmon filets ( pounds)
  • 2 medium peaches, thinly sliced
  • 2 tablespoons olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons Dijon mustard
  • Minced garlic
  • Kosher salt
  • Black pepper
  • Red pepper flakes

Instructions

  1. In a medium bowl, mix peach preserves, bourbon, olive oil, soy sauce, Dijon mustard, minced garlic, salt, pepper, and red pepper flakes to create the marinade.
  2. Reserve half of the marinade in the refrigerator.
  3. Marinate salmon fillets in the remaining marinade in a resealable bag for at least 30 minutes.
  4. Preheat oven to 375°F (190°C).
  5. Sear salmon fillets skin side up in an oven-safe skillet with olive oil for 2–3 minutes until golden.
  6. Flip fillets and add peaches; cook for an additional 2–3 minutes.
  7. Pour reserved marinade over salmon and peaches; bake for 12–15 minutes until salmon reaches an internal temperature of 145°F (63°C).
