  • 1 cup unsalted butter (melted)
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • Zest of 2 lemons
  • 8 ounces cream cheese (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 5 ounces yogurt or sour cream
  • ¼ teaspoon salt
  • 3 cups blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (177°C) and prepare an 8" x 8" baking pan by lining it with foil.
  2. For the crust, combine melted butter, sugar, lemon zest, salt, and flour in a bowl. Press into the bottom of the prepared pan.
  3. In another bowl, beat softened cream cheese until smooth; gradually add sugar. Mix in lemon zest, eggs one at a time, yogurt/sour cream, salt, and flour until combined.
  4. Gently fold in blueberries and pour the filling over the crust.
  5. Bake for about 60 minutes until set in the center. Allow to cool before slicing into bars.
