  • 1/4 cup granulated sugar (for cream cheese filling)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract (for cream cheese filling)
  • 1 tablespoon vanilla extract (for batter)

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. In another bowl, beat cream cheese with sugar, egg yolk, and vanilla until smooth.
  6. Fill muffin tins about 3/4 full with batter. Top each muffin with cream cheese mixture and swirl gently using a toothpick.
