  • 2 cups elbow macaroni
  • 2 tbsp unsalted butter
  • 1 large egg (beaten)
  • 1 can (13 oz) evaporated milk
  • 1 cup whole milk
  • 8 oz extra-sharp white cheddar cheese
  • 12 oz mild cheddar cheese (or Monterey Jack)
  • 8 oz mascarpone cheese
  • Salt
  • Cajun seasoning
  • dry mustard powder
  • ground nutmeg
  • fresh cracked pepper

Instructions

  1. Preheat your oven to 375°F and butter a casserole dish.
  2. Cook the elbow macaroni in boiling water until al dente; drain and stir in butter.
  3. In a bowl, combine shredded cheeses.
  4. In another bowl, whisk together mascarpone, evaporated milk, whole milk, salt, Cajun seasoning, mustard powder, and nutmeg.
  5. Mix cooked macaroni with half of the cheese blend until well combined.
  6. Taste for seasoning and stir in the beaten egg.
  7. Layer half of the macaroni mixture in the prepared dish; top with half of the remaining cheese. Repeat layers.
