  • 1 cup beer
  • 1/4 cup apple cider vinegar
  • 1/4 cup beef stock
  • 5 tbsp melted butter
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp paprika
  • 2 tbsp chili powder
  • 2 tbsp kosher salt
  • 2 tbsp coarse ground black pepper
  • 1 tbsp brown sugar

Instructions

  1. Preheat your Traeger grill to Smoke mode (or Super Smoke for Timberline) with the lid open for about 5 minutes.
  2. Set the temperature to 225°F and preheat with the lid closed for around 10 minutes.
  3. In a mixing bowl, combine all rub ingredients: garlic powder, onion powder, paprika, chili powder, kosher salt, black pepper, and brown sugar.
  4. Generously coat the brisket on all sides with the rub.
  5. Place the brisket fat side down on the grill grate and cook until it reaches an internal temperature of 160°F (approximately 3-4 hours).
  6. Mix together your baste ingredients in a bowl.
  7. Once at temperature, wrap the brisket in aluminum foil and pour the baste around it within the foil packet.
  8. Return wrapped brisket to the grill and continue cooking until it reaches an internal temperature of 204°F (another 3-4 hours).
  9. Let rest for about 15 minutes before slicing against the grain.
