- 3 oz cooking oil
- 2 large eggs
- 1 cup sugar
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- 1 1/4 cups chocolate chips (divided)
Instructions
- Preheat your oven to 350°F.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg. Set aside.
- In a large bowl, mix cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until well combined. Stir in one cup of chocolate chips.
- Gradually add the dry ingredients to the wet mixture until just blended; do not overmix.
- Spray an 8" x 4" loaf pan with oil spray and pour in the batter. Top with remaining chocolate chips.
- Bake for 50–60 minutes or until a toothpick comes out clean from the center.
