  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg. Set aside.
  3. In a large bowl, mix cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until well combined. Stir in one cup of chocolate chips.
  4. Gradually add the dry ingredients to the wet mixture until just blended; do not overmix.
  5. Spray an 8" x 4" loaf pan with oil spray and pour in the batter. Top with remaining chocolate chips.
  6. Bake for 50–60 minutes or until a toothpick comes out clean from the center.
