  • 1 center-cut beef tenderloin roast (4 to pounds, trimmed and tied)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons avocado oil
  • 6 tablespoons softened butter
  • 6 garlic cloves (minced)
  • 1 teaspoon finely chopped fresh rosemary leaves
  • 1 teaspoon finely chopped fresh thyme leaves

Instructions

  1. Allow the beef tenderloin to come to room temperature (1–2 hours). Pat dry with paper towels.
  2. Mix softened butter, minced garlic, rosemary, and thyme in a bowl to create herbed garlic butter.
  3. Preheat oven to 425°F (220°C). Season the beef generously with salt and pepper.
  4. Heat avocado oil in a cast-iron pan over medium-high heat. Sear the beef on all sides until browned (about 10 minutes).
  5. Spread herbed garlic butter over the top of the beef. Transfer the pan to the oven and roast for 15–20 minutes, depending on desired doneness.
