  • 2 pounds cubed beef chuck
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 sticks celery, chopped
  • 6 cloves garlic, minced
  • 1 (6 ounce) can tomato paste
  • 1 cup dry red wine
  • 3 cups beef broth
  • 1 pound Yukon Gold potatoes, diced
  • 4 medium carrots, sliced thick

Instructions

  1. Prepare all ingredients and dredge beef cubes in flour.
  2. Heat olive oil in a Dutch oven over medium-high heat and sear the beef until browned; set aside.
  3. Sauté onions and celery in the same pot until softened.
  4. Add garlic and tomato paste; cook until fragrant.
  5. Deglaze with red wine, then add beef broth and Worcestershire sauce.
  6. Return beef to the pot along with Italian seasoning and bay leaves; simmer covered for one hour.
  7. Stir in potatoes and carrots; continue simmering until tender, about another hour.
  8. Remove bay leaves, adjust seasoning with salt and pepper, then serve warm.
