Ingredients
- 2.5 kg / 5 lb standing rib roast (bone-in)
- 1 onion (quartered)
- 1 head of garlic (halved)
- 5 sprigs thyme
- 3 sprigs rosemary
- 150g / 10 tbsp unsalted butter (softened)
- 5 garlic cloves (minced)
- 2 tsp finely chopped fresh rosemary (or 1 tsp dried)
- 2 tsp finely chopped fresh thyme (or 1 tsp dried)
- 2 tsp salt
- 1 tsp black pepper
- 1 1/2 cups beef broth/stock (low salt)
- 2 1/2 cups dry red wine
- 1 tbsp cornflour/cornstarch (optional)
Instructions
- Preheat the oven to 325°F (160°C).
- Bring the roast to room temperature (about 1 hour). Pat dry.
- Mix softened butter, minced garlic, herbs, salt, and pepper; rub generously over the roast.
- Place onion and garlic in a roasting pan; set the roast on top.
- Pour beef broth and wine around the roast, inserting a meat thermometer into the thickest part.
- Roast until the internal temperature reaches 130°F (54°C) for medium rare (approximately 120 minutes).
- Let rest for at least 20 minutes before carving.
