  • 1 lb flank steak (thinly sliced)
  • 2 Tbsp olive oil (divided)
  • 1 lb fresh broccoli (cut into florets)
  • 6 Tbsp low sodium soy sauce
  • 3 Tbsp packed light brown sugar
  • 1 ½ Tbsp corn starch
  • 2 tsp sesame oil
  • 1 tsp fresh ginger (grated)
  • 2 tsp garlic (grated)

Instructions

  1. Begin by cooking white rice according to package directions.
  2. Prepare the beef by freezing it for 30 minutes, then thinly slice against the grain.
  3. In a bowl, mix together soy sauce, brown sugar, ginger, garlic, corn starch, and sesame oil to create the stir fry sauce.
  4. Heat 1 Tbsp of oil in a large skillet over medium heat and sauté the broccoli for about 4–5 minutes until bright green. Remove from skillet.
  5. Increase heat to high, add remaining oil, and cook beef for about 2 minutes per side until browned.
  6. Return broccoli to the skillet with the beef, pour in the sauce, and simmer until thickened (about 3–4 minutes). Serve over rice.
